Its time for Baking Wednesday with Lu: It is titled "Christmas bark" but there is nothing Christmas about it, So I'm changing it to "Yummy Bark" My sister Bran gave me a cookbook for Christmas, with some really good recipes in it, and this was one of them! It was a HUGE hit, we all love the bark .. heres how to bake them.
First preheat over to 350 then line in one layer 1 sleeve unsalted saltine crackers, on parchement lined baking sheet with sides.
next place 1 cup of butter with 1/2 cup light brown sugar in a pan, and melt on med. stirring constantly for 3 mins.
pour butter sugar mixture over crakers, spread evenly, bake for 15 mins.
Remove from oven, sprinkle 12oz of semi sweet chocolate morsels (stick back in over for about a min or so, just when they start to melt) spread evenly over entire layer of crakers.
then take 1 cup of chopped pecans (I used walnuts instead bc thats what we like) and sprinkle over top of chocolate.
goes in fridge for 1 hour! When removed from fridge break into pieces ...
SERVE and ENJOY ... it was SOO yum!
Warning: The brown sugar/butter mixture bled through the parchment paper, and it was HARD to get of when it was cleaning time, but non the less still DELISH!
I normally use foil, but it still gets stuck and you have to peel it off.
